Texas Smoked Brisket

Ingredients:
8-10 lbs of well marbled brisket with a thin layer of fat
1-2 Jars Granddaddy's Ultimate Marinade
1 Bottle Granddaddy's Ultimate Texas BBQ Rub
Begin by marinating your brisket for 24 to 48 hours in the Ultimate Marinade of your choice. Make sure the meat is completely submerged in the marinade and that you save some for brushing later on. Make sure you keep your marinating brisket in the fridge or cooler during this process. If you're short on time, you can skip this step...but I highly recommend it.
When your ready to cook, add a generous amount of BBQ Rub to both sides of the brisket. Prep your smoker by adding good quality charcoal topped with your favorite smoking wood chips (hickory, mesquite, applewood) and try and not use lighter fluid to get your fire going. I also recommend using a pan filled with beer below the meat to help moisten the meat. Maintain 225 degrees in your smoker and add the meat. Smoke your brisket 14 to 15 hours, turning every 2 hours. I also recommend brushing on some of the left over marinade and sprinkling on a little more BBQ Rub every time you turn it over. This will intensify the flavor and help with keeping it moist.
When it is done, it will resemble a charred piece of ???, but it will be juicy and flavorful inside. Cut the brisket across the grain and serve it with our award winning BBQ Sauce of your choice.
Serve with BBQ Baked Beans, Potato Salad, Texas Toast, and a condiment tray of sliced onions, jalapeņos, and pickles on the side.
